Cooper’s Hawk
If you think that all the wineries in the country are in California, you’re in for a surprise when you find out about Cooper’s Hawk.
When I walked into Cooper’s Hawk, I was greeted by a small gift shop, where several different wine glasses and other knick-knacks were for sale. Farther in, there’s a counter where customers can do a wine tasting. The winery features eight different wines each month, and you can taste all eight for only $7. Amateurs need not be intimidated; the staff is incredibly friendly and accommodating. And even farther into the building is the restaurant, where you can have an elegant, delicious dinner. It’s three great things all in one location.
The winery has all its grapes delivered from various parts of the country, but the wine-making all takes place right there. Customers can even see the fermentation tanks themselves! The fact that they can make a few hundred to a thousand gallons in a batch gives them the opportunity to make super-high quality wines. Cooper’s Hawk produces about 50,000 gallons of 40 different kinds of wine per year.
Cooper’s Hawk is one of only three winery-restaurants in the country. The menu consists of a number of different items and entrees, including popular dishes like red wine and honey mustard short ribs. This pork is slow-roasted for several hours in honey, soy, ginger, and brown sugar until it is so tender it falls right apart. And before that, have the Over the Border eggrolls as an appetizer. You won’t be able to stop eating the trio of sauces served with these southwest chicken “eggrolls.” The cedar plank salmon is served with a soy ginger glaze that will ‘wow’ you. As an added bonus, every dish on the menu coincides with a certain bin number, which correlates with the wine list each guest receives upon entering the restaurant, so you’ll be able to pair your meal with a complimenting drink. Don’t leave without dessert either, like the chocolate lava cake or the chocolate 'clair cake.
